Aubergine Pasta

- 2 aubergines, diced
- 1 Clove garlic, minced
- 0.5 litres Homemade Italian Tomato Sauce
- 1 Tablespoon fresh basil, chopped
- 1 Teaspoon olive oil
- ¼ kg linguine or spaghetti
- Grating cheese
- Salt and freshly ground black pepper
- Heat the olive oil in a saucepan and add the garlic. Sauté for 5 minutes.
Add the aubergines and salt. Sauté until lightly browned, stirring so the aubergine does not stick. - Bring a large pot of water to a rapid boil. Add the linguine (or spaghetti) and stir for a few minutes. Cook 10 – 12 minutes or until tender.
- Add the tomato sauce, basil, and black pepper to the saucepan. Cover and simmer for 15 minutes or until tender.
- Drain the linguine and toss with the aubergine sauce. Serve and top with your favourite grating cheese
